Greek Tomato Salad


  • 1 cup cherry tomatoes quartered
  • 1/4 cup diced red onion
  • 2 tablespoons chopped flat leaf parsley
  • 2 teaspoons red wine vinegar
  • 1 teaspoon olive oil
  • Kosher salt and fresh ground black pepper to taste


  • Combine all of the salad ingredients in a bowl and stir together until combined. Taste for seasoning, cover and refrigerate until ready to serve.
