Italian Tuna Salad


15 oz can chickpeas, drained

    1 can tuna, drained (I used solid albacore in water)

      1/2 cup pitted Kalamata olives, roughly chopped

        1/3 cup finely chopped red onion

          1/4 cup minced fresh cilantro (I didn’t have fresh, so I used dried)

            1/2 teaspoon salt

              1 tablespoon fresh lemon juice

                2 tablespoons olive oil

                  freshly ground pepper

                    Lettuce (optional)

                      Bread (optional)


                        Place all ingredients in a bowl and stir until well combined.

                          Serve with bread, over lettuce, or enjoy on its own!
